I made this last night. It was so delicious. I had all the herbs growing in my garden so used them rather than dry. I brought the chicken to room temperature and preheated the pot. I cooked for 30 mins with foil. Then put in a meat thermometer and it got to 74 in just another 25 minutes. I also cut the potatoes into quarters rather than 2cm cubes as I was worried they’d breakdown too much. That worked well, they cooked to a lovely consistency. So for me it was even quicker and easier than expected with such a great result. Will definitely make again.
